copy kibana.yml from the pod:

# oc exec -c kibana $kibana_pod -- cat /opt/kibana/config/kibana.yml > kibana.yml

save a copy of this original one

# cp kibana.yml kibana.yml.config

edit kibana.yml as desired

create a configmap

# oc create configmap logging-kibana --from-file=kibana.yml=kibana.yml

add a volume mount for this configmap

# oc set volume dc/logging-kibana -c kibana --add -t configmap --name=kibana-config -m /opt/kibana/config --configmap-name=logging-kibana

This should redeploy kibana with the new config

If you need to edit the config:

# oc edit cm logging-kibana


# oc rollout latest dc/logging-kibana
# oc rollout status -w dc/logging-kibana

Ah, right, sorry, my instructions were for upstream, which uses a different path.  You could review the kibana documentation to see if it is possible to override the location of the config file so that it could be mounted via a configmap in a separate location.
